An Uttapam Breakfast

an uttapam morning - my favorite of breakfasts

•mix together sooji, yogurt and water to a thin pancake consistency
•add mineral salt
•scoop onto a warm pan like a pancake using some oil or ghee
•topping the side that is up with onions, tomatoes, chopped cilantro and baby spinach
•top with additional ghee and flip
•cook until outer edges are crispy

eat as is or serve with peanut chutney, etc.
